“Polish”, as a noun, is ‘a substance such as powder, paste or liquid used to give a bright shine to something; the decent, fine quality of someone’s manners, speech, etc.’; and as a verb, it is ‘to make the surface of something smooth and shiny by rubbing methodically; to make a person’s behaviour gentle and decent by teaching’,
e.g.
We need to polish our shoes regularly.
I bought some wax polish to polish the wooden floor our parlour.

“Polish” (adjective, always with a capital ‘P’) is ‘the people or things belonging to Poland, a country in Europe’,
{The people of Poland are called ‘Poles’, always written with a capital ‘P’.}
e.g.
She needs to learn Polish language because she’s going to work in Poland.
