a breed of sheep bred for its fine wool – some are with horns some are with very short horns – originally from Spain, but now bred in many parts of the world, especially in Australia

Merino sheep are famous for their long fine fleece (= wool).  The winter clothes made of merino wool are in great demand in the wool trade!
