The opposite word in meaning of ‘claimant’ is “defendant“.
‘claim’, a noun = the act of asking, demanding or requesting for something as one’s own by right or for some assistance/help; and ‘to claim’ = to ask for, to say that something said is true or to demand for a right or to demand for something, such as a position, title, reward, money, benefit, etc.

a person who makes a claim,  especially in a court of law;

a person who demands or states that something, such as a right, title, property, etc., is his/hers; a petitioner,

In the case of who is the true heir to Late Mr Peterson’s property, Mr Dawson, the nephew of Mr Peterson, is the claimant and Mrs Jackson, the cousin of Mr Peterson, is the defendant.

There are three claimants to the throne of this small island kingdom, and the wise chiefs, chieftains and ministers are splitting hairs to decide which one is the right one or the most suitable one to claim such a great position.

In these difficult times, more and more claimants are coming forward to claim their unemployment compensation.
