a person whose hobby is to watch wild birds in their natural surroundings, and who gets pleasure out of watching and recognising different birds;

a birder;

a zoologist who studies birds in their natural habitat,

e.g.

Bird watchers are known to spend more hours looking for the birds than actually watching them go about their daily activities.

Salim Ali, the great Indian ornithologist, liked to be called a bird watcher more than to be called an ornithologist.
